Secret Sutherland Distillery 2010 Tasting Notes

Imagine: Visit the candlelit apothecary's shop with jars of herbs, spices and dried lemons, ready to grind on the battered oak refectory table and add to the hot chocolate simmering on the stove to ward off chills.

Neat, without water

Colour: Sauvignon Blanc

Nose: Candlewax, orange sorbet, lemon sorbet, lemon barley water, barley sugar, Brazil nuts, milk chocolate-covered hazelnuts, pistachio nuts, lamb's wool, a trio of biscuits – buttered raisin, oat and gingernut, plus iced coffee and snapdragons.

Palate: Waxy mouthfeel, orange sorbet, lemon sorbet, oak table, chilli, paprika, white pepper, clove, star anise, nutmeg and spiced hot chocolate.

Finish: Buttered biscuits and lemon curd.

With a few drops of water

Nose: The spice is still there but much softer and mixed in a teacake with candied orange, plus beeswax, hazelnuts, walnuts, buttered scones with greengage jam and clotted cream, banana milkshake, milk chocolate buttons and hairspray.

Palate with water: Banoffee pie, milk chocolate-covered bananas, spiced hot chocolate, strawberry blancmange, lemon tart, lemon and rose Turkish delight, vanilla latte, gingerbread latte, crème caramel, waffles with vanilla ice cream, and brioche with lavender honey.

Finish: Rum and raisin ice cream.

Overall: All the qualities you’d find in, oh, say, a great Clynelish, as an example… with extra spice and buttered brioche complementing the classic lemon and wax notes. A very more-ish dram.
