About Dead Reckoning Killik Australian White Rum

Born in regional Victoria, Killik Handcrafted is a brand that’s rapidly gaining favour with Australian rum drinkers looking for something ‘a bit different’. Killik are one of the few (but growing) number of Australian distilleries that are exploring muck and dunder in their rum production.

The Killik custom distilled Dead Reckoning is a un-aged pot still single retort. This “high ester” funky rum is a molasses-based spirit that has been said to compare very favorably to those of similar styles from Jamaican legends Hampton and Worthy Park.

Tasting Notes for Dead Reckoning Killik Australian White Rum

On first sniff, there’s a real creamy note – almost like a caramel milkshake that’s gone warm. Almost immediately this changes to overripe fruit for a moment,  but then an underlying bubblegum note makes it’s presence known. The palate is an incredibly complex whirlwind of flavors. The milky-bubblegum comes charging through, but is then cut in half by an almost fruit-tingle mouthfeel (almost like there’s some bicarbonate of soda in there). On the finish, a deep rooty sweetness – almost sarsaparilla – quality about it.  There’s a peppery sensation that coats the mouth as the flavor fades.

Neat, over ice, with water, in a cocktail.

Production Notes

Taking a page out of the Jamaican handbook, KILLIK uses wild yeast and a longer fermentation period, adding dunder/muck pits with their finished result being a high ester, super funky unaged rum. Pot Still, Single Retort, high ester.

Dead Reckoning is Australia's first local independent rum bottler - of both rums abroad and rums made in Australia. 

Dead Reckoning has also added their own unique touch by aging rums within Australia, allowing the climate down under to create its own influence, and also through the use of locally source wine and fortified wine barrels that are unique to Dead Reckoning.
