Sight: Dark mahogany, slow movement in glass. Aroma: Raisined fruits (grapes, plums and dates). Notes of sweet spices like cinnamon and memories of cookies, in addition to citric and wood aromas. Taste: Very balanced, sweet, acid with a light and elegant bitter touch.

• Wine Advocate: The 1980 Don PX Selección is said to come from a warm and dry year that favored the raisining of the Pedro Ximénez grapes. This has lots of candied fruit and spice and combines the 17% alcohol with a whopping 340 grams of residual sugar. This aged in American oak butts until its bottling in September 2018. It surprised me with a complex and somewhat savory nose, reminiscent of bitter chocolate, licorice and roasted coffee, carob beans and black pepper. It's super concentrated, dense and pungent, with a savory component, meaning the sugar is not as noticeable as you might think. It came through as complex and layered, very complete and intense. There are 4,600 bottles and 60 magnums of this.

Producer InformationBodegas Toro Albalá is a wine producer in the Montilla-Moriles region of Andalucia, southern Spain. It was established in 1922 by Jose María Toro Albalá, but its roots date back to an estate that was founded in 1844 by Albalá's grandfather, Antonio Sánchez Prieto. It was the first producer to commercialize Pedro Ximénez as a single variety wine, and now makes a range of high-end wines from the variety. The original bodega and vineyard was situated on slopes near Castillo de Poley, a castle outside of Aguilar de la Frontera. There is rumored to be a remaining cask of the 1844 vintage from this vineyard still cellared today. In 1922, Jose María Toro Albalá relocated the winery into what had been the first power plant in the Montilla-Moriles region. Jose María established the Bodegas Toro Albalá name, and focused the winery on the Pedro Ximénez grape that the Montilla-Moriles region is now known for. The power plant continues to thematically inspire labeling with Albalá offering a dry fino from Pedro Ximénez that is sometimes sold in bottles that look like lightbulbs.
